Moros and Cristianos Recipe

Moros y Cristianos
(Moors and Christians - Beans and Rice)
serves 4-6

  • 500g black beans, cooked or canned)
  • cooked white rice
  • 1 large onion, finely chopped
  • 3 garlic cloves, crushed (add more or less to your taste)
  • 1 tbsp olive oil, for frying
  • 1 medium green pepper, seeded and chopped
  • 250-300ml chicken stock
  • 3 tbsp tomato purée or 1 tin tomatoes
  • 3 tsp ground cumin
  • salt and pepper, to taste

Instructions:

  1. Heat oil and gently fry onion, garlic and pepper until soft
  2. Add tomato, beans, cumin and chicken stock
  3. Add rice and cook over low heat in a covered pan, stirring occassionally until rice cooked
  4. Season with salt and pepper
  5. Optional: Garnish with coriander and or parsley
